Broiled Sweet-Sour Chicken ========================= NOTE: This recipe may also be used on drumsticks only. This recipe has a Dipping Sauce. INGREDIENTS: 1/2 tsp Freshly Grated Orange Zest 1/4 cup Orange Juice 1/4 cup Water 3 Tbsp Honey 1 Tbsp Cider Vinegar 1 tsp Cider Vinegar, keep separate 1/2 tsp Salt 1/4 tsp Ground Coriander 1 tsp Cornstarch 1/4 cup Fresh Mint, chopped 2 lbs Chicken (trimmed and skin removed) - OR 8 Drumsticks 1/4 tsp Freshly Ground Pepper DIRECTIONS: Prepare dipping sauce: combine orange zest, orange juice, water, honey, 1 Tbsp vinegar, 1/4 tsp salt and coriander in a small saucepan; bring to a boil. Whisk cornstarch and the remaining 1 tsp vinegar in a small bowl until smooth. Add the cornstarch mixture to the saucepan and return to a boil. Whisking until thickened - approximately 30 seconds to 1 minute. Remove from the heat and stir in the mint. Position oven rack in the upper third of the oven; preheat broiler to high. Coat a broiler pan with cooking spray or oil lightly. Sprinkle chicken with the remaining 1/4 tsp salt and the 1/4 tsp pepper. Broil, turning once, until an instant-read thermometer inserted into the thickest part registers 165°F, about 15 minutes total.
